The Food Biz: Zola flavors will linger

The Nashville restaurant scene got an earthshaking shock last week when Debra Paquette, one of most highly respected chefs in town, announced that her restaurant Zola will soon close after almost 13 years in business.

But Rick Bolsom, who is a partner in Zola and Mirror restaurants and owner of Tin Angel on West End, says Paquette will continue to make guest appearances in Tin Angel’s kitchen, and he adds that some of Zola’s most popular dishes will move to the Tin Angel menu.
